Homemade Apple Cinnamon Bread Recipe

  • 2 cups (0.47 l) flour 
  • 1 cup (0.24 l) granulated sugar 
  • 2 teaspoons of baking soda
  • 2 teaspoons of ground cinnamon
  • 1 teaspoon of salt
  • 1 cup (0.24 l) of kefir
  • ¼ cups of vegetable oil
  • 2 large eggs 
  • 1 teaspoon of vanilla extract
  • 2 apples, peeled, cored, and diced.

Topping (optional): 3 tablespoons granulated sugar,  1 teaspoon ground cinnamon.

* Preheat oven to 175 °CC. Grease a 23×13 cm bread pan with vegetable oil. 

* In a bowl, combine chopped apples with 1 teaspoon of cinnamon and ¼ cup sugar. 

* Set aside. In a large bowl, whisk together the vegetable oil, kefir, eggs, and vanilla until smooth. 

* Add flour, baking soda, salt, remaining cinnamon, and sugar. 

* Beat for about 3 minutes until a smooth dough is formed. 

* Then add the cooked apples to the dough and stir gently. 

* Pour the dough into the prepared pan and flatten the surface. 

* Combine the topping ingredients (if you wish to use it) and sprinkle on top of the dough. 

* Bake for 50 minutes, or until a toothpick stuck in the bread is removed clean. Let cool to room temperature before cutting.
