Ingredients: Mushroom soup with chestnuts


1 carrot 

diced 1 stalk of celery

chopped 1 onion

4 tablespoons olive oil 

500 g of fresh mushrooms of your choice

peeled and chopped; 3 garlic cloves

minced 500 g fresh chestnuts

peeled and coarsely chopped; 1–1.2 kg of chicken or vegetable broth

salt

black pepper 


Method: Mushroom Soup With Chestnuts

* Heat olive oil in a large saucepan. 

* Add celery onions and carrots and cook over medium heat for 5 minutes until tender. 

* Add the mushrooms and continue cooking until the mushrooms are soft and lightly browned. 

* Add the garlic and cook for a couple more minutes until you smell the strong garlic aroma. 

* Add chestnuts and 1 liter of broth, stir and simmer over low heat for about 30 minutes, adding more broth if necessary. 

* Season with salt and pepper. 

* Let cool for 15 minutes, then mash until puree. 

* Serve warm. 


You can add to the finished soup: Seared brisket and chopped chestnuts Sour cream Chopped fresh herbs and extra virgin olive oil.
