How to Make Homemade Donuts

  • You will also need an instant-read thermometer and a pastry bag with its accessories.

Ingredients Donuts Dough

  • ¼ cup whole milk
  • 2 tsp instant yeast
  • 1 tsp sugar 
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • ¼ tsp salt 
  • 1 cup mashed potatoes (when making them, do not add salt)
  • 3 Tbsp melted unsalted butter 
  • 2 large eggs
  • 1 Tbsp pure vanilla extract
  • Canola oil (for the deep frying)

[Vanilla Custard]

  • 2 cups (0.47 liters) whole milk 
  • 1 cup (0.24 liters) heavy 35% cream
  • 3 large eggs
  • 2/3 cup sugar
  • 1 tablespoon of pure vanilla extract
  • 3 tablespoons corn starch
  • 1-1/2 tablespoons grated lemon zest
  • The juice of one lemon
  • 1/8 teaspoon of table salt

How to Make the Custard Recipe Donuts Filling

1. Prepare your cup of mashed potatoes in advance and make sure not to add any salt to it. They will need to be creamy.

2. I normally add a bit of cream, one egg yolk and a bit of unsalted butter to my recipe.

3. Add Canola oil to your deep fryer and set on high.

Donuts Dough Trick:

1. Heat the milk to 110 degrees F and remove from heat. Dilute the yeast into it and let sit for 10 minutes.

2. Using a Kitchen Aid Stand-Alone Mixer, install the dough hook and add all dry ingredients and mix at a low speed until well blended.

3. Add all other dough ingredients (wet ones), including the yeast that has been resting for 10 minutes in warm milk, and mix with the dough hook for about 3 minutes. 1 minute at high-speed, then reduce the speed to 1 for 2 minutes. The dough will come together in a softball.

4. Sprinkle just a bit of all-purpose flour to your bowl so your dough does not stick and cover the mixing bowl with a plastic wrap and a wet clean kitchen towel on top, and let rest for about 1 1/2 to two hours. The dough needs to rise a bit.

5. Add some flour to a clean surface, and roll out your dough to about 1/2 inch (5.08 cm) in thickness.

6. Using a metal deep ring of the size you choose, cut them out and let them rise for another 1/2 hour.

7. Put 3 to 4 of your donuts to the deep fryer and fry about 1 to 2 minutes. Light brown on each side.

8. Spread them out on a cookie sheet that is lined with 2 coats of paper towel to absorb the oil.

How to Make the Vanilla Custard Filling Recipe

Vanilla Custard:

1. In a medium-size bowl, combine eggs, sugar, vanilla, lemon, lemon zest, and cornstarch and mix well until mixture is fluffy.

2. In the meantime, combine milk and cream in a saucepan, and heat on medium-low heat but do not boil.

3. Add about half the quantity of milk and cream to the egg mixture to temper it so the heat does not curdle the egg mixture.

4. Take the egg mixture and blend in the hot milk and cream and set on medium-low and stir until the mixture thickens. Set aside and cover with a plastic wrap right on top of the custard so, it does not form a crust. Let it is cool to room temperature.

2. Fill the pastry bag with the custard and fill the donuts through the small incision.

3. Sprinkle sugar on donuts.
