Mushroom Soup Recipe Vegan:

  • 1 cup spelled or pearl barley
  • 60 g dried porcini mushroom
  • 225 g of fresh porcini mushrooms or champignons chopped
  • 4 tablespoons olive oil
  • 1 large onion
  • Peeled and chopped 4 garlic cloves
  • Minced 2 celery stalk chopped
  • 4 small potatoes peeled and cut into thin slices
  • 1 liter of chicken broth
  • 1 cup heavy cream
  • 1 tbsp freshly chopped thyme salt
  • Black pepper
  • 8 slices of baguette bread
  • Grated Cachocavallo cheese or similar.

* Boil the spelled (or pearl barley) until soft.

* Drain the water.

* While the spelled is boiling, heat the olive oil in a saucepan, and fry the onions, garlic, dried and fresh mushrooms, and celery together until tender - about 10 to 15 minutes.

* Add broth, potatoes, and thyme and cook for another 15 minutes, until the potatoes are cooked through.

* Let cool in a saucepan, and mash with a blender until smooth.

* Taste and season with salt and pepper to taste.

* Add cream and continue cooking until the soup thickens.

* Add prepared spelled or pearl barley and stir.

  1. Toast the baguette slices on both sides, sprinkle with grated cheese on top and continue to fry until the cheese is melted.
  2. Pour the soup into bowls and place the resulting cheese croutons in each.
  3. Serve warm.
